Zucchini Pie

Summer is here - that means it's zucchini season! I hope you'll enjoy my recipe for Zucchini Pie. Delicious ... easy ... wonderful for breakfast, lunch or dinner!
Serves 6 - 8
Oven temp - 350 degrees
Ingredients:
4 large eggs
1/2 cup oil
Handful of chopped flat leaf parsley
salt & pepper to taste
1/2 cup grated parmesan OR romano cheese
1 cup Bisquick
3 cups zucchini - diced or grated
1 onion - diced
1/2 cup shredded mozzarella cheese
Instructions:
- In a large bowl, whisk the eggs. Then add the oil, parsley, salt & pepper. Mix well.
- Add the grated parmesan or romano; stir until smooth.
- Add the Bisquick, mixing well until combined.
- Add remaining ingredients, combining thoroughly.
Pour mixture into a large, buttered, 10" pie plate.
Bake at 350 degrees for about 30 minutes, or until golden and a knife comes out clean.
